Low carb potatoes?  Yup.  I had them for supper tonight and they’re delicious.  :slaphappy:

I thought this was going to be a South Beach Diet recipe! My mom swears by their special “mashed potatoes” recipe– and it’s pureed cauliflower, not potatoes at all. She SAYS it tastes wonderful and they eat ‘em all the time… but… this is my MOM we’re talking about. The same woman who made me eat “soy” hotdogs as a kid - and those were GROSS (back in the late 1970s at least– maybe they’ve come a long way since then..)

I’ve done the pureed cauliflower and it really is good with enough butter, salt and pepper for taste. :) These potatoes were delicious…they look, peel and cook up just like any other potato.  ~ NancyB
